- •½ cup urad dal (split black lentils)

Soak urad dal for 4 hours. Grind to a smooth batter, then mix with atta and salt.

Ferment the batter at room temperature for 8 hours until bubbly.

Heat a flat pan and lightly grease with mustard oil. Pour a ladle of batter and spread in circles.

Drizzle oil around the edges and cook until golden and crisp.
